Thursday Cafe: M.J. Best Southern Biscuits
Ingredients:
2 c. Flour
1 teaspoon Salt
1 tablespoon Sugar
2 tablespoons Baking Powder
1/3 Shortening or butter
1 cup Milk
Directions:
1. Preheat oven to 425 degrees.
2. In a large bowl, stir together the flour, baking powder, salt and sugar. Cut in the shortening or butter until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the sides of the bowl.
3. Put mixture onto a floured surface. Knead gently 15 to 20 times. Pat or roll dough out to 1 inch thickness. Cut biscuits with a juice glass dipped in flour. Repeat until all dough is used. Arrange biscuits on an ungreased baking sheet.
4. Bake for 14 minutes.
Serving suggestions:
Serve with butter & honey, sausage gravy or strawberry jam.

Miracle Monday: The God who Hears
A few months ago my husband and I were traveling to Tarpon Springs for a much needed weekend getaway. We left the house mid afternoon, in attempt to avoid rush hour traffic. Our plan didn't work. We found ourselves on the interstate, in the city of Tampa, in bumper to bumper traffic. The traffic stretched out for miles. We would go about 20 feet only to stop. This went on for 30 minutes or more. Stop. Start. Stop. Start. Then to add to the congested driving conditions, it started raining. My husband who desperately needing some rest and relaxation was becoming more tense by the minute. Now not only was the traffic creeping along, the rain was creating hazardous conditions. It was difficult to see the car in front of us, and the oil residue on the pavement made stopping a challenge. The menacing dark clouds continued to gush forth gallons of water. It looked as though it would be at least an hour to make it through the traffic. The rain looked like it had set in. My easy going husband finally reached his point of frustration and cried out, "Lord please stop this rain!"
Immediately the rain stopped. I have never seen anything like it in my life. The dark clouds were still hovering over the interstate, but the rain stopped. The traffic continued it's steady snails pace, but the rain ceased.

God heard our prayers and I know he stopped the rain for us. He hears the cries of his children. The God who created the Universe, who created us, cares, hears and knows. He is still calming storms. If you need a miracle in your life, cry out to Jesus. He is listening.
