Thursday Cafe



Almond-Orange Biscotti

1 1/2 c. unbleached flour
(can use 1/2 whole grain pastry flour)
1 tsp. baking powder
1/4 tsp. salt
2 eggs
2 tbsp canola oil
1/2 c. sugar 
2 tbsp orange juice
2 tsp. grated orange peel
1/2 tsp. vanilla extract
1/2 tsp. almond extract
3/4 c. sliced almonds lightly toasted

Directions:  Preheat oven to 350 degrees. Lightly coat a large baking sheet with cooking spray.

In a medium bowl using an electric mixer beat eggs, oil, sugar, for 2 minutes on medium speed.  The batter should look pale yellow and thick.  Beat in the orange juice, orange peel, and extracts.  With the mixer on low speed add the flour mixture.  Stir in the almonds.

Divide the dough in half.  With floured hands, form the dough into two 1 1/2 x 14 inch logs on the baking sheet.  Pat the logs to smooth the tops. Bake for 20 minutes.  Take it out of the oven and let it cool for 10 minutes.  

Reduce oven temperature to 325. Transfer the logs to a cutting board. Slice diagonally into 1/2 inch thick slices.  Place slices, cut side down on the baking sheet and bake for 10 minutes. Turn each slice and bake for 10 more minutes. Remove to a rack to cool.  

Brew a cup of coffee, put your feet up and enjoy! : )
